FSHN 382A - Study Abroad--Italy: Food as Medicine

In this course, students will explore the function of food consumption patterns, individual foods, and specific food components (nutrients and phytochemicals) and their role in the promotion of health and the prevention of chronic disease. The international focus is on the health benefits of the Mediterranean diet and its specific constituents consumed in Italy (including olive oil, grapes and other fruits, fish, and grains). Students will evaluate the effects of individual food components to provide health benefits through critical review and examination of scientific studies.
